More cupcakes

My sister Miss LJH is getting hitched this Christmas to Mr ME. And rather than a full on wedding cake, I am making a veritable mountain of cupcakes for their big day and Mr ME's aunt is making a cake for the top tier so they have something to cut.

This weekend I did trial run of 24 vanilla cupcakes to see how I might fare in December. Apart from needing to fill the cases with a bit more mixture (I am using muffin cases rather than standard cake cases) they were well received in terms of taste. And they will be iced "dog poo" stylee!

Miss LJH and Mr ME took 9 home with them, leaving 10 with us (favourite boyfriend consumed two on Sunday and has suffered a bout of tooth melt). Made with a lot of sugar, real butter and full fat cream cheese in the icing these are not for those on a diet.

Thank goodness I ran home from work today (10km) so I can justify scoffing one.
